Pea and Tarragon Soup

Ingredients

400gms frozen peas
1 onion
Fresh tarragon or dried to taste
1 pint of vegetable stock
Creme fraiche
 

The words 'What you do...'
  • Firstly chop the onion and put it into a saucepan.
     
  • Add the peas, stock and tarragon.
     
  • Cook on a medium heat for about 20mins.
     
  • When cooled a bit, liquidise.
     
  • Just before serving add a swirl of creme fresh to the bowl.
