Pea and Tarragon Soup
Ingredients
400gms frozen peas
1 onion
Fresh tarragon or dried to taste
1 pint of vegetable stock
Creme fraiche
- Firstly chop the onion and put it into a saucepan.
- Add the peas, stock and tarragon.
- Cook on a medium heat for about 20mins.
- When cooled a bit, liquidise.
- Just before serving add a swirl of creme fresh to the bowl.
