Brilliant Beefburgers
Ingredients
500g lean minced beef
1 small red onion
2 garlic cloves, finely chopped or crushed
1 egg, beaten
a little salt and pepper
Very finely chop the red onion, as small as you possibly can, and gently fry in 1 teaspoon of oil for 5 minutes.
Whiz together the minced beef and onion in a food processor (you might have to do this in two batches). You only want to whiz for about 15 seconds, so the texture of the meat remains fairly coarse.
Stir the garlic, egg, salt and pepper into the meat.
Form the burger mixture into 4 balls, and flatten them down to approximately 2cm thickness. Chill the burgers in the fridge for at least 1 hour.
Bring the burgers back to room temperature. Cook the burgers in a very hot frying pan or on a griddle. You can treat your burgers like steaks, and cook them to your liking:
Rare to medium rare – 3-4 minutes per side
Medium – 4-5 minutes per side
Medium to well done – 5-6 minutes per side
Allow the burgers to rest for a couple of minutes before serving. Serve in warmed buns with your choice of salad accompaniments and sauces. Add a cheese slice as well if you want.
