Jam and Coconut Sponge

Ingredients

  • 4oz Margarine
  • 4oz caster sugar
  • 2 medium eggs
  • 4oz self raising flour
  • Dessicated coconut
  • Strawberry jam

The words 'What you do...'
  • Heat oven to 180C/350F/Gas mark 4. Grease a 18cm, 7" sandwich tin.
     
  • Cream margarine and sugar until light and fluffy.
     
  • Beat in eggs, one at a time, adding a little flour with each.
     
  • Gently fold in remaining flour.
     
  • Place in a prepared tin and bake for 20-25 mins.
     
  • When cool , spread some jam over the top of the sponge and dust with the dessicated coconut.
