Jam and Coconut Sponge
Ingredients
- 4oz Margarine
- 4oz caster sugar
- 2 medium eggs
- 4oz self raising flour
- Dessicated coconut
- Strawberry jam

- Heat oven to 180C/350F/Gas mark 4. Grease a 18cm, 7" sandwich tin.
- Cream margarine and sugar until light and fluffy.
- Beat in eggs, one at a time, adding a little flour with each.
- Gently fold in remaining flour.
- Place in a prepared tin and bake for 20-25 mins.
- When cool , spread some jam over the top of the sponge and dust with the dessicated coconut.
