Looking at Life Biscuits

Rolled out dough with letters cut out of it to form biscuits

 Ingredients

200g (7oz) self-raising flour
25g (1 oz) cornflour
100g (4oz) butter or solid margarine
100g (4oz) caster sugar
1 small egg, beaten
Few drops of vanilla essence

The words 'What you do...'

Sift the flour and cornflour into a large mixing bowl.  Rub in the butter and stir in the sugar, egg and vanilla essence with a wooden spoon.  Knead gently until you have a smooth dough.

Sprinkle a clean work surface and the rolling pin with a little flour.  Roll out the dough to the thickness you would like (if you are using letter cutters roll to a thickness of  4-5 mm) and use whatever shaped cutters you have.

Place the shapes onto a greased proof baking sheet, and make sure you leave space between the shapes to allow for expansion.

Place in a pre-heated oven at 180C/350F/ Gas mark 4 for about 15 minutes.  Remove from oven and place on a wire rack to cool.
