Quick Fruit Loaf
Ingredients
1 cup or 1/2 Pint milk (whichever variety you use)
1 cup or 225g dried mixed fruit
1 cup or 225g brown sugar
2 cups or 450g self-raising flour
1 teaspoon mixed spice
Place all the ingredients into a mixing bowl and stir really well.
Once well mixed, pour mixture into a greased 1lb loaf tin.
Place in a pre-heated oven at 150C/325F/Gas mark 3 for between 45 minutes and 1 hour (to check whether cooked, insert a skewer into the loaf and if clean when removed the loaf is cooked).
Slice and spread with butter or enjoy without.
