Coffee and Walnut Cake
Ingredients
6oz marg
6oz caster sugar
6oz self raising flour
3 eggs
1tsp camp coffee or dissolved instant coffee
walnuts for decoration
For the butter icing
4oz butter
8oz sieved icing sugar
coffee flavouring as required
1. Heat oven 180c, gas mark 4. Grease two sponge tins
2. Cream marg and sugar until light and fluffy
beat in eggs , one at a time, adding a little flour with each
3. Gently fold in remaining sieved flour
4. Divide into the two prepared tins and bake in the oven for 20-25mins
5. Sieve the icing sugar in a bowl and add the coffee flavouring and margarine. Mix until smooth and glossy.
6. Spread half the mixture onto one half of the cake. Place the other cake on top and spread the remainder of the butter icing. Decorate with the walnuts.
