How 2 make hot cross buns
With Easter just around the corner, here's a fast and easy way to make hot cross buns.
Ingredients
For the buns:
500g pack of white bread mix
2 heaped tsp mixed spice
50g butter, chopped
150g mixed peel
85g currants or sultanas
100ml milk
1 egg
For the crosses and the glaze:
3 tbsp plain flour
golden syrup for brushing

Here’s what you have to do…
1. Tip the bread mix into a bowl and stir in the spice, sugar and fruit. Rub in the butter with your fingertips. Then stir in the peel and either the currants or sultanas.
2. Pour 100ml/4fl oz water into the milk, then beat in the egg and pour it all into the dried ingredients. Mix to a very moist dough (the wetter the better!) Leave for 5mins. Cut the dough into 10 equal pieces and shape into buns with oiled hands (this stops the mixture sticking to you). Try not to use any extra flour as this will make the dough tough.
3. Space the buns apart on 2 greased tins, cover loosely with cling film, then leave in a warm room until they have nearly doubled in size. Roughly around 45mins-1hr.
4. When the buns have risen, make the crosses. Mix the flour with 2 1/2 tbsp water to make a thick paste. Pour into a plastic bag and snip one of the corners so you can pipe the mixture onto the buns.
(N.B You may alternatively use less water to make the paste and then roll out into sausages with your hands. This is slightly easier than the above method.)
5. Bake in a pre-heated oven 220C/fan 200C/gas mark 7 for 12-15mins until risen and golden. Then brush with the golden syrup for the glaze.
Eat them while they’re hot, hot, hot!
